Oatmeal cake

1/2 cup butter                    1 tsp. soda

pinch of salt                      2  eggs              1 1/3 cup flour                  1 tsp. vanilla

1 cup quick cooking oats   1 cup sugar

1 1/4 cup boiling water     

1 can coconut icing  

     Place butter, oats and water in bowl.

Stir well.

     Cool, add all remaining ingredients stirring well.  Pour into greased and floured pan 9x13 inch pan bake 325 deg. for 40 minutes.  Let cake set out of oven for 45 minutes.  Top with coconut icing.

No-bake cookies

1 3/4 sugar                        1/2 cup milk

1/2 cup peanut butter         1 tsp vanilla

3 cups quick-cooking oats

1/2 cup butter

4 tble. unsweetened cocoa powder

 

     In a medium saucepan, combine sugar, milk, butter, and cocoa. Bring to a boil, and cook for 1 1/2 minutes. Remove from heat, and stir in peanut butter, oats, and vanilla. Drop by teaspoonfuls onto wax paper. Let cool until hardened.

Mix first and set aside:

1 egg beaten
1 Tbsp white vinegar
5 Tbsp water

3 C flour
1 tsp salt (omit salt if using self rising flour)
1+1/4 C shortening

Cut shortening into flour until flour gets crumbly.

Add egg mixture to the flour mixture. Mix well.

Roll out on floured surface.
Use enough dough to cover your pie pan.

If your dough cracks or breaks just add a bit more water to keep it pliable.

My Homemade Apple Pie


#1. I cut, core, peel apples and slice...however much you need for your pie.
#2. Put them in a dish and sprinkle lemon juice on them.
#3. Place a layer of apples, some Raw Brown sugar all over them.
#4. Sprinkle with some flour all over them.
#5. Sprinkle with your spices..Cinnamon, nutmeg, allspice and ginger on the apples.
#6. Put little dabs of real butter all over the apples.

#7. Then keep layering the #2. Through #6. Until your apples fill the pie shell.

#8. Put the top crust on top. Pinch edges of crust together and crimp edges. Use a knife to slit the top of crust in the middle. Sprinkle a little Cinnamon on the top and sprinkle more Raw Brown sugar on top.

Bake at 350° for about 70 minutes.

beef veggie soup

    Oh, I don't know how to cook in small portions, I usually make 5 gallons at a whack. I start with a beef roast and cut it into 1"-2" pieces. Set aside. In your skillet dissolve some coconut oil & 1TBSP. Olive oil, Add beef.
     Dice an onion & garlic & slice some celery & add to the meat.  I season the meat and veggies with Pink Himalayan salt & pepper. Cook until the meat is browned & veggies tender. Remove from heat to assemble soup body.  I usually use green beans, peas, carrots, okra, tomatoes, tomato sauce or a can of tomato juice, beef broth, black eyed peas, squash & potatoes, But feel free to add & delete what you like. Add all to a good sized soup or stock pot, add meat & cooked veggies, lemon pepper, basil, oregano & smoked paprika. Stir & set on the burner & cook until veggies are tender. Make sure to stir occasionally & when it's done...Enjoy.

Lemon 7 UP Pound Cake

CAKE:

3 sticks (1 1/2 cups) butter
3 cups sugar
5 eggs
3 cups all-purpose flour
2 tbsp. lemon extract
3/4 cup 7-Up
Cream sugar and butter, beat until fluffy. Add eggs one at a time and beat well. Add flour, beat in lemon extract and 7-Up. Grease and flour Bundt pan well.
Bake at 350°F for one hour and fifteen minutes or until done.

 

ICING:

3 cups confectioners’ sugar
4 tbsp. butter
1 tsp. lemon extract
Mix and frost

Biscuits and gravy

Biscuit recipe:
4cups self rising flour
1Tablespoon sugar
1Tablespoon baking powder
2 cups buttermilk
2/3 c. Shortening or lard (I prepfer the lard).
Mix together, but Do Not knead.
Roll out to 1" thick, on a floured surface.
Cut & Place on a greased cookie sheets.
Bake at 400° for 15 minutes. Remove and brush tops with melted butter.

Sausage gravy recipe:
1-2 lb. salt and pepper pork sausage, browned, save drippings in the skillet. I remove sausage until the gravy is assembled. To the drippings, add 1/4 cup of flour, use a fork and stir to get out all the lumps & slowly add milk, stirring contantly. I use 3/4 gallon on milk. Stir to keep lumps out until it thikens, add sausage back to skillet & stir to combine. Remove from the heat & spoon over biscuits and Enjoy!
